A Mother’s Day Treat – Peppermint Creams

Peppermint creams remind me of when I was little as they were the easy sweet to make. I was reminiscing about them with friends the other day and this inspired me to make some, and then I thought about what a lovely treat they would be wrapped up as a little token gift to Mummy’s and Grandmother’s on Mother’s Day which is only a couple of weeks away now.

I love having Mother’s Day – to me it is like an extra birthday in the year! A day where Mummy gets her own way and that can;t be half bad at all!

So here is the recipe for my little yummy treat, which really did taste as yummy as I can remember!

You need

  • 30ml of double cream
  • 300g of icing sugar
  • 1 egg white
  • peppermint essence
  • white chocolate
  • Sprinkles

Basically you throw it all in to a bowl and whisk it together until you have a dough. If it looks too runny then just add more icing sugar, but you need to be able to roll it out!

Once it is in a dough, icing sugar up your work surface and roll it out flat but not too thin. Choose a cutter shape that you like (you really need a small one and I ended up washing up one from the playdoh box!) and then cut out you shapes and put them on a baking tray.

Keep rolling and cutting the leftover dough until you have none left.

Leave to dry out for a bit.

Melt some white chocolate.

Spread a bit in the middle of each peppermint cream and then sprinkle with cake topping.

Easy peasy lemon squeezy, as we used to say as kids!

Voila!
